Meal Plan and Grocery List For The Week

Alright! I made the meal plan and grocery list for this week. I’m going to list out all the ingredients for you but make sure you check your pantry before you buy anything. We try not to eat meat or dairy very often so I typically don’t buy it or cook it at home. Feel free to add meat or dairy to any of these dishes!

Dinners

1.Quinoa, Butternut Squash and Broccoli “Mac and Cheese”:

This is my healthified version of the traditional Mac and Cheese. It’s non-dairy and I use quinoa instead of macaroni. I’ll be posting my own recipe when I make this dish but check out these recipes that inspired my creation:

2. Roasted Beet, Butternut Squash, Delicata Squash, Kale and Quinoa Salad

I usually make this salad with farro, but I have a bunch of quinoa so I will use quinoa instead. It’s a nice, warm winter salad. Here’s a similiar recipe:

3. Poblano and Silken Tofu Enchiladas with Mushroom Gravy

Enchiladas are my favorite Mexican dish. This is a new idea I had on how to make vegan enchiladas. We shall see how it turns out! These ones look good too:

4. Lentil Chili with a Cornbread Crust

This is one of my favorite winter meals. I just make a pot of lentil chili, pour it into a baking dish, then top it with cornbread batter and bake it! I got the idea from this recipe:

5. Tan Tan Ramen with Zucchini Noodles 

I absolutely love Tan Tan Ramen. It’s so spicy and delicious. It’s usually unhealthy and a lot of calories so I decided to experiment to see if I could create a satisfying, healthy version.
