January 3rd to January 9th Meal Plan and Grocery List

Happy New Year! I spent the last couple of days in a cabin in the Shenandoah Mountains, it was wonderful! I’m definitely glad to be back to cooking my own food in my own kitchen, though. It’s finally getting cold here so I planned a couple of soups and a hearty curry dish.

Meal Plan

Dinners:

  1. Tan Tan Ramen with Zucchini Noodles  I’m so excited to make this again! It was so delicious!
  2. Spicy Quinoa, Carrot, Sweet Potato, Acorn Squash, White Bean and Kale Soup I was inspired by this recipe on Pinterest but, I want to make my soup have a little kick!
  3. Garlic Broccoli Noodles with Tofu So unfortunately, the grocery store only had broccoli crown so I’m not going to be able to make the broccoli into noodles but, I will still attempt this dish I saw on Pinterest.
  4. Potato Curry Action I really love curry potato dishes. They are so comforting and filling. I was inspired by this dish I saw on Pinterest.
  5. Hearty Kale Caesar Salad I love kale salad. I was inspired by this recipe on Pinterest.
  6. Black Bean Burritos I crave Mexican food all the time but rarely do I want burritos. While I was away for New Years, I had some awesome burritos that inspired me to make my own. Check on this recipe on Pinterest.

Breakfasts:

  1. Avocado Egg Salad on English Muffin I love egg salad but it can be pretty unhealthy when made with mayonnaise. I use avocado instead! Also I buy these super healthy Ezekiel Sprouted Grain English Muffins. You can check out this recipe.
  2. Pumpkin Baked Steel Cut Oatmeal I just can’t get enough of baked oatmeal. It saves me so much time and I never get sick of it because there are so many variations to the recipe possible. Check out this recipe.
  3. Breakfast Burrito So I totally plan on just adding scrambled eggs to my Black Bean Burritos and having it for breakfast one morning. I can’t resist a breakfast burrito! This one looks really good!
